Katy volunteers at Gardens of Roswell assisted living facility once a month. She is also working on a Sweet Shoppe Girl Scout badge so we thought we’d combine the two and make candy with the residents. It was fun and everyone seemed to enjoy themselves. The chocolate-coated items didn’t come out too well, I think the chocolate got overheated. But the hard candy came out well. Toward the end we burned the last of the syrup for the hard candy and it’s a wonder we didn’t set the smoke alarm off!

Here is the recipe we used:
1 cup sugar
1/2 cup light corn syrup (get Karo, the generic is a lot of HFCS)
1/4 cup water
1/4 t. extract (you can find all kinds of flavors at the craft shop)
Food coloring (optional)
Candy molds and sucker sticks
Spray molds with non-stick spray
Combine sugar, corn syrup and water in medium saucepan
Insert candy thermometer
Stir until sugar melts
Boil without stirring until it reaches 295 degrees (hard crack stage)
Remove from heat, add flavoring and coloring
Spoon into molds
Allow to cool and remove from mold.
